Job Summary: The Director of Food and Beverage oversees all food and beverage operations at the resort, including the overall management of the deli, cafeterias, James Moore Tavern, Fireside Flatbread, Sports Center Bar, and catering operations.
Essential Functions:
Oversee all food and beverage staff, making appropriate hiring, firing and disciplinary decisions
- Cultivate and manage working relationships with food, alcohol, and supply vendors
- Place orders for food and supplies with food and drink vendors, or direct managers to do so
- Oversee the quality of food and drink products
- Oversee the quality of service
- Schedule work hours, or direct managers to do so
- Train staff and oversee and support direct reports in their staff training efforts
- Collaborate with Lodging Director and Group Sales team to plan and execute all resort events including corporate events, weddings, etc.
- Maintain licenses necessary to operate all food and beverage outlets
- Work with President and Vice President to develop annual operating plans and budgets
- Work with Human Resources regarding weekly payroll
- Execute and adhere to operating plans and budgets, appropriately monitoring payroll, food, and supply costs
- Engage with President and Executive Team on short and long-term strategic planning for the Resort generally and the Food and Beverage Department specifically
NOTE: All Bolton Valley employees are required to perform alternate functions from time to time, both within and outside of their assigned department, particularly during peak periods such as holiday weekends.
Customer Service Expectations: With extensive customer contact, must be helpful, friendly, courteous and professional in accordance with Bolton’s commitment to providing superior customer service. Always looking to enhance the quality of a guest’s experience at the resort.
Required Knowledge and Skills:
- Solid organizational and supervisory skills
- Knowledge of food quality and safety issues
- Knowledge of POS systems
- Valid proof of DLC certification prior to employment, or willingness and ability to attend DLC certification course offered by the resort
Physical and Mental Demands: Requires prolonged periods of standing and walking, and lifting up to 50 lbs. Some bending and squatting are required to move food and supplies. Stress can result from the fast pace and heavy customer contact.
Work Environment: The position involves some exposure to open flames and hot items, and the use of potentially hazardous sharp cutting utensils. Most work is performed indoors, but some occasional outdoor work, such as snow shoveling, may be required. Outdoor work is performed in all weather conditions, including extreme cold, snow, wind and rain, on varied snow surfaces.
